West African Peanut Soup

Ingredients:

Approximately 1 pound of Chicken - (I use thighs or breasts)
1 each Red & Green Pepper
1 Onion
2 cloves of Garlic
1-2 cans Chicken broth
1 large can Stewed Tomatoes
2 Tbs. Natural Peanut butter
1 handful of Orzo or Rice

Directions:

1. Boil the chicken until it falls apart and is almost out of water.
2. Chop it into bite sized pieces, removing skin and bone if any.
3. Rinse out the pan you've cooked it in because of the weird stuff
that accumulates inside when you're boiling chicken.
4. Put the chicken back in the pan and add the chicken broth,
chopped garlic, peppers, onion, peanut butter and tomatoes.
5. Stir this all up and let it cook for awhile, adding rice when it
seems peppers are within 20 minutes of being done (soft).

(As in all soups, the longer it cooks, the better it tastes.)
