PESTO PASTA

Ingredients:

2 Cups fresh Basil
4 or 5 cloves of Garlic
1 Cup English Walnuts
1 Cup Parmesan Cheese
1/4 Romano Cheese
1 Cup Extra-Virgin Olive Oil
Salt and Pepper
2 or 3 fresh Tomatoes

Directions:

1. Combine the basil, garlic and walnuts in the bowl of a food processor,
or halve the recipe and use a blender. Chop.

2, Leave the motor running and add the olive oil in a slow steady stream.

3. Shut the motor off, add the chesses, a pinch of salt and freshly ground pepper.
Process briefly to combine, then scrape out into a bowl or jar.

4. Stir desired amount* into hot pasta
(I use Rotini but any kind will do,
the Rotini tends to collect the pesto so that each bite has flavor).

5. Serve with tomatoes cut into 6ths.

*Enough for about 6-8 servings. Refrigerate the rest.
