My Austrian Grandmother's Knoedels

Ingredients:

1 loaf of 5 day old bread
2 or 3 eggs
Half cup of water

Directions:

1. Rip bread into tiny pieces in a large bowl
2. Add the egg and water and mix
3. Form 6 or 7 balls
4. Bring large pot of water to boil
5. Carefully drop each ball into the boiling water
6. Boil on medium heat for 12 minutes
7. The knoedels will expand and rise to the top
8. Then carefully ladel out the bread balls

(This is a side dish for Pork roast with dark rich gravy and sauerkraut)
