Ingredients:
* 6 to 8 med to large green tomatoes Directions:
1. Peel and chop the tomatoes coarsely.
2. Combine tomatoes with sugar, lemon juice, lemon zest,
3. Cook on medium heat until the mixtures bubbles and is clear.
4. Add 1 tbs of butter to hot sauce.
5. Pour into pie crust and bake at 425 for 35 to 45 minutes.
This is similar to green tomato mincemeat
* 3/4 cup of sugar
* 2 tbs of lemon juice
* 1 tsp of lemon zest
* 2 tbs of corn starch
* Cinnamon to taste
* 1 tbs of butter
* 1 prepared unbaked pie crust
corn starch and cinnamon in saucepan..
and would lend itself to raisins and nut meats.
