Ingredients:
Bunch of Beets (3 large ones)
Directions:
1. Peel and chop the beets into 1/2 to 1" cubes
1 raw medium size Onion
1 can chicken broth
8 oz. sour cream with chives
2. Put in pan with chicken broth and boil slowly until tender.
3. Pour the contents of pan into blender and add the peeled chopped onion.
4. Puree until all is no longer solid.
5. Chill in refrigerator an hour or two.
6. Spoon into bowls and add large dollop of sour cream with chives.
(If no sour cream with chives is available, chop chives and sprinkle on top of sour cream.)
